Fruit Ripening in Vitis vinifera: The Interplay between Biology and Environment

Dr. Castellarin is an Associate Professor in the Wine Research Centre at The University of British Columbia, Canada. He also holds a Tier 2 Canada Research Chair in Viticulture. This talk will focus on the ripening process in grapes and the biological mechanisms that determine grape and wine quality. He will discuss how metabolite accumulation is affected by environmental factors, including water availability, temperature, and light.
