At Joullian Vineyards in Carmel Valley, CA we have an internship available for the Harvest of 2016.
HISTORY:
Joullian Vineyards, founded 1982, is an ultra-premium Carmel
Valley, CA vineyard and winery that produces Cabernet Sauvignon,
Cabernet Franc, Merlot, Zinfandel, Chardonnay, Sauvignon Blanc
and Semillon. You will be part of a winemaking team with a
combined 60 years experience in mountain grape growing and
winemaking. The unique, fully climate controlled winery allows
for Bordeaux, Burgundy and Rhone style winemaking.
Our interns always receive “hands on” experience in every phase.
JOB DESCRIPTION:
- July: Fining, Filtration, and Bottling red and white varietals, design harvest experiments.
- August: Grape sampling multiple ranches, simple lab analyses, horticultural and landscape work, barrel prep, blend older reds, crush equipment prep and testing, winery cleaning and systems testing.
- September: Sauvignon Blanc, Semillon Chardonnay harvest, crush, inoculations and barrel fermentation. Zinfandel/Italian Field Blend and Merlot crush, inoculations and punchdown/pump-over fermentations.
- October: Santa Lucia Highland Chardonnay harvest, crush, inoculations, barrel fermentation, Sept. white wine barrel stirring -monitoring–topping. Merlot, Cabernet Franc and Cabernet Sauvignon crush, inoculations and punchdown/pump-over fermentations. Rack Sept. reds to barrel, stir, and monitor. Stir and monitor all whites in hot and cold cellars for RS, ML and H2S.
- November: Cabernet Sauvignon crush, inoculations, punchdown/pump-over fermentations. Rack October reds to barrel. Stir, top and monitor all barreled wines for RS, ML and H2S.
- December: Rack November reds to barrel, move ML completed barrels to cold room, Stir, top, SO2. Prepare April bottling list and get packaging materials quotes.
INTERNSHIP PERIOD:
July 15 – December 15
QUALIFICATIONS:
Junior/ Senior or Graduate student in Enology, Viticulture or
closely related field. Prior winemaking experience
preferred.
WAGE:
$15/hour
