Phenolics Session

This session will provide an excellent overview of current research directions in grape and wine phenolics. It will begin with the 2006 Honorary Research Lecturer, Douglas O. Adams’ address on grape and wine tannins and this will be complemented with reports of informative studies related to phenolics and tannins. Three reports on Pinot noir will include the nature of the binding of tannins onto grape skins, light exposure on phenolics, and changes in phenolics during extended maturity. A keynote address on the application of multivariate methods to composition and sensory perception will be presented by Hildegarde Heymann of the University of California, followed by a report on the prediction of anthocyanin and tannin concentrations during fermentations using UV-Visible spectra.
